And now some lemongrass soup

12-16 oz. fresh egg noodles (OR enough fresh or dried noodles for 2-3 portions)
6 cups good-quality chicken stock
1-2 stalks fresh lemongrass, minced OR 4 Tbsp. frozen prepared lemongrass
1/4 to 1/2 lb. chicken breast or thigh, chopped into small pieces (or use leftover roasted chicken + bones)
1/2 cup good-quality (thick) coconut milk
3-4 kaffir lime leaves (available fresh or frozen at Asian stores)
3 cloves garlic, minced
1 thumb-size piece galangal OR ginger, shredded
1 red chili, sliced, OR substitute 1/4 to 1/2 tsp. dried crushed chili or cayenne pepper
1 large carrot, sliced
1 Tbsp. oyster sauce (I used Golden Dragon brand)
1/2 to 1 Tbsp. brown sugar
2 Tbsp. fish sauce
2-3 cup bok choy (or baby bok choy), chopped
generous handful fresh coriander
Optional extra vegetables: handful mushrooms and/or broccoli segments
Optional: 1 Tbsp. fresh lime juice

Prepare the noodles according to instructions on package. Drain and rinse through with cold water to keep from sticking.
Bring stock to a boil in a large soup pot. Add the prepared lemongrass, kaffir lime leaves, and the chicken. Boil over medium-high heat 3-4 minutes.
Reduce to medium heat and add the garlic, galangal/ginger, chili, and carrot. If adding mushrooms, add them now. Simmer 2-3 more minutes.
While soup is simmering, add the oyster sauce and fish sauce as well as 1/2 Tbsp. sugar.
If your bok choy is the large variety, add only the thick white stalk pieces now (the green leaves take only seconds to cook, so reserve those for later). If using broccoli, add it now too. Continute simmering the soup 2-3 more minutes.
Lastly, add the leafy greens of the bok choy. Stir and simmer 30 seconds.
Reduce heat to low. Add the coconut milk, stirring well to incorporate.
Taste-test for salt, adding more fish sauce if not salty enough. If too salty or sweet for your taste, add 1 Tbsp. lime or lemon juice. If too spicy, add more coconut milk. If too sour, add another 1/2 Tbsp. sugar.
To put the soup together, mound a generous amount of the cooked noodles in each bowl. Ladle over the hot soup and top with fresh coriander. Note: this soup can be served with chili sauce on the side for those who like it extra spicy. ENJOY!

Cholesterol Levels: Mushrooms themselves provide you with lean proteins as they have zero cholesterol, fats and very low carbohydrates. The fiber and certain enzymes in them also help lower cholesterol level. Moreover, the high lean protein content in mushrooms helps burn cholesterol when they are digested.

Breast Cancer & Prostrate Cancer: Mushrooms are very effective in preventing cancer of breast and prostrate due to presence of Beta-Glucans and conjugated Linoleic Acid having anti carcinogenic effects. Out of these two, linoleic acid is particularly helpful in suppressing effects of estrogen. This estrogen is the prime reason for breast cancer in women after menopause. The Beta-Glucans, on the other hand, inhibit growth of cancerous cells in cases of prostrate cancer. Selenium in mushrooms is very effective in inhibiting cancerous cells.

Diabetes: Mushrooms can be an ideal low energy diet for diabetics. They have no fats, no cholesterol, very low carbohydrates, high proteins, vitamins and minerals, a lot of water and fiber. Moreover, they contain natural insulin and enzymes which help breaking down of sugar or starch of the food. Again, they are known to contain certain compounds which help proper functioning of liver, pancreas and the other endocrinal glands, thereby promoting formation of insulin and its proper flow. Diabetics often suffer from infections, particularly in their limbs, which tend to continue for long. The natural antibiotics in mushrooms can help protect them from this dreaded situation too.

Immunity: Ergothioneine, a powerful anti oxidant present in mushrooms is very effective in giving protection from free radicals as well as boosting up immunity. Mushrooms contain natural antibiotics (similar to penicillin, which itself is extracted from mushrooms) which inhibit microbial and other fungal infections. They also help heal ulcers and ulcerous wounds and protect them from infections. A good combination of vitamins A, B-Complex and C, found in mushrooms also strengthens immune system.

i. don’t cook cold meat
If you’re only going to change one thing about your BBQ habits, make sure you always bring your meat back to room temperature before cooking. The biggest struggle is to get the heat from the outside of your steak into the middle without burning the surface to a cinder. The warmer things are in the middle before it goes onto the fire, the easier it is to win the battle.

ii. preheat properly
If you’re going to get a good crust on your food and that lovely BBQ flavor, you need your grill to be hot before you start cooking. This also helps if you’ve been a bit slack in the cleaning department.

iii. thin is in
The thinner your meat, the less far the heat has to travel to cook the middle, so the easier it is to get the inside right without burning the outside.

iv. don’t poke & prod
It takes time for your caramelized BBQ crust to develop and this won’t happen if you’re continually flipping your steaks or burgers. Only turn once or twice. And definitely don’t squash everything down as this forces the juices to run out and leaves you with sad dry meat. Sausages are also best left alone – piercing the skins dries them out.

Roasted Beet “Tartare” with Truffle Oil

4 medium-size beets

¼ cup olive oil

Salt and pepper

1 cup mayonnaise

¼ cup Worcestershire sauce

2 tablespoons Dijon mustard

1 tablespoon extra-virgin olive oil

Salt and pepper, to taste

1 tablespoon chives, finely chopped (about 6 chives)

1 teaspoon chervil, finely chopped (about 2 stems)

1 tablespoon white truffle oil

8 caperberries

1 cup micro arugula

Directions

1. Preheat oven to 400 degrees. Coat the outside of the beets with the olive oil. Season with salt and pepper. Place beets in a roasting pan and cover with aluminum foil, sealed tightly. Roast until tender, approximately one hour.

2. While the beets are still warm, peel the skins off with a paper towel. Chop each beet into six parts and place in a food processor. Pulse the beets on and off, on high speed, until the pieces are an even size—about the size of a lentil.

3. Remove beet mixture and strain excess moisture with cheesecloth or a fine mesh colander. Set aside to drain.

4. In a separate mixing bowl, combine all liquid sauce ingredients and whisk until smooth.

5. Place the drained beets in a mixing bowl and add just 3 tablespoons of the sauce. Add 1 tablespoon of chopped chives and 1 teaspoon of chopped chervil.

6. Gently mix until the sauce and herbs are incorporated and coating the beets.

Roast Leg of Lamb and Mashed Peas

1 leg of lamb, bone in, about 6½ to 7 pounds
¼ cup 1-2-3 vinaigrette (1 part Dijon mustard, 2 parts lemon juice, 3 parts olive oil; salt and pepper to taste)
¼ cup fresh lemon juice
16 cloves garlic, 8 whole, 8 minced
½ cup fresh rosemary leaves
1 tablespoon plus 1 teaspoon salt
1 tablespoon coarsely ground black pepper

1. Preheat the oven to 400 degrees.

2. Season the lamb with salt and pepper evenly on all sides. Mix the lemon juice and the vinaigrette together. Using a pastry brush, baste the lamb with the lemon juice-vinaigrette mixture.

3. Cut 8 small slits with a paring knife in random places in the lamb, and insert the 8 whole cloves of garlic. Process the minced garlic and the rosemary together in a food processor until it is chunky but not yet pureed and pat the mixture over the lamb. Put the lamb in a roasting pan and roast for 30 minutes.

4. Reduce the oven heat to 350 and roast the lamb for 1 more hour for medium (an internal temperature of 145-150 degrees when measured with a meat thermometer). Remove the lamb from the roasting pan and let it rest for 15 minutes before carving.

For the Mashed Peas

1 package frozen peas (16 oz.)
1 package frozen peas and pearl onions (16 oz.)
2 tablespoons heavy cream
2 tablespoons salted butter, melted
¼ teaspoon salt
⅛ teaspoon ground black pepper

1. In two separate small saucepans, thaw the frozen peas and the frozen peas and pearl onions over low heat until just warm.

2. In a food processor fitted with a metal blade, puree the peas and heavy cream until smooth. Do not puree the peas and pearl onions.

3. In a medium-size mixing bowl, stir the pureed peas into the whole peas and pearl onions, along with the melted butter, salt, and pepper. Transfer mixture to a covered baking dish and reheat in the 350-degree oven while the lamb rests.

While preparing a meal, keep a big bowl on the counter. Put all your chopping, cutting, and peeling discards into it, then make one trip to the garbage instead of 10.

Put all your fruit, milk, silken tofu, or yogurt in the blender pitcher and store the pitcher in the refrigerator overnight. (You can even prechop a banana. It will brown, but that will not affect the flavor of the shake.) In the morning, set it on the blender and press the button.

Buy a weekly calendar. Jot down all the traditional things―school events, birthdays, appointments. But use it to keep track of nontraditional things, too. Write down bills that come through the mail and mark their due dates six days ahead. Plan weekly dinner menus and write them on the calendar. Use it to also record the kids’ long-term assignments. That helps prevent those evenings of racing around to do everything at the last second.

Here’s how to keep nitrates and nitrites off your plate:

1. Minimize consumption of processed foods and cured meat products like hot dogs, sausage, and cold cuts. Check labels carefully though—these compounds are also found in other products that contain processed meat and even some meat-free products.

2. Don’t be fooled by “uncured” or nitrate-free brands. These products typically contain high amounts of nitrates obtained from ingredients like celery juice, which means they could contain as much as if not more than their traditional counterparts.

3. Eat organic foods. They’re not grown with synthetic nitrogen fertilizers, which can boost a crop’s nitrate content significantly.

4. If you live in an agricultural region, consider treating your water with a home water distiller, a reverse osmosis filter, or an ion exchange filter to remove any fertilizer nitrates that have accumulated in the groundwater.

5. Eat a diet high in antioxidants. Certain vitamins, like vitamin C, can reduce the conversion of nitrates.

Avoid Nitrates and Nitrites in Food

Nitrates and nitrites are chemical compounds that cause a lot of consumer confusion.

Nitrates are a normal part of the diet, but excessive levels can cause problems, especially for kids who pound for pound take in more than adults do. They have been linked to diseases like leukemia, non-Hodgkin lymphoma, and ovarian, colon, rectal, bladder, stomach, esophageal, pancreatic, and thyroid cancer.

They’re found in our diets in several ways: as synthetic food preservatives and naturally occurring in fruits and vegetables like spinach and celery. Sodium nitrate and potassium nitrite are added to cured meat to preserve its color, prevent fats from going rancid, and stop bacteria from growing. They’re also found in drinking water thanks to nitrogen-based fertilizers as well as livestock waste.

Here’s where things get tricky: If nitrites are exposed to high heat during cooking, they can convert to nitrosamines, which are carcinogenic. And when nitrates are used as a food additive or consumed, they can convert into nitrites.

Scientists believe that these conversions may be responsible for the link they’ve discovered between nitrates and nitrites and the diseases listed above. Nitrate or nitrite exposure has also been known to cause pregnancy complications and infant health problems.

Before you give up celery for good, keep in mind that there’s a difference between eating nitrates added to foods as preservatives and consuming them via produce. Nitrates that occur naturally are found alongside compounds like vitamin C that inhibit their conversion into nitrosamines in the body. When we eat nitrates and nitrites in foods artificially treated with them, we may not be getting these complementary nutrients and their preventative effects.

Heat oil in a Dutch oven over medium heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add kale and cook, tossing with two large spoons, until bright green, about 1 minute. Add broth, coriander, cumin, garam masala and salt. Cover and cook, stirring occasionally, until the kale is tender, 8 to 10 minutes. Stir in chickpeas; cover and cook until the chickpeas are heated through, 1 to 2 minutes.

Keep Your Engine Clean

Old and dirty engines use up more fuel than clean engines. A lot of fuel is lost and wasted because of the debris that clogs up the engine. Excess heat can also contribute to fuel inefficiency, because the substances in gasoline can decompose because of high temperatures.

•Use the ball of the foot, not your heel. Some people press on the accelerator using the heavy part of the foot, like the heel. To properly feather the gas pedal, you need to use the lighter part of your foot, like the ball or the sole.
•Feed, don’t floor. There are times that you need to floor the gas pedal, especially if you’re moving out of a sharp curve. The trick is to keep very light pressure on the gas pedal, just enough to feed a steady amount of fuel to the engine. Only push the pedal to the metal when you need it.
•Keep the fuel flow constant. When you feather the accelerator pedal, keep the throw steady to feed just the right amount of fuel to the engine. If you have problems balancing the weight of your foot to the pedal, it helps to keep a halved tennis ball right under the accelerator pedal lever. Before making popcorn on the stove or in an air popper, soak the kernels in water for 10 minutes. Drain the water, then pop as normal. The additional moisture helps the popcorn pop up quicker and fluffier with fewer “old maids.”

To banish ants from the kitchen, find out where they are coming in and cover the hole with petroleum jelly. Ants won’t trek through the jelly. If they are coming under a door, draw a line on the floor with chalk. The little bugs also won’t cross a line of chalk.

Burned a pot of rice? Just place a piece of white bread on top of the rice for 5-10 minutes to draw out the burned flavor. Be careful not to scrape the burned pieces off of the bottom of the pan when serving the rice.

Before you chop chili peppers, rub a little vegetable oil into your hands and your skin won’t absorb the spicy chili oil.

If you aren’t sure how fresh your eggs are, place them in about four inches of water. Eggs that stay on the bottom are fresh. If only one end tips up, the egg is less fresh and should be used soon. If it floats, it’s past the fresh stage.

Don’t store your bananas in a bunch or in a fruit bowl with other fruits. Separate your bananas and place each in a different location. Bananas release gases which cause fruits (including other bananas) to ripen quickly. Separating them will keep them fresh longer.

History of wine

Archaeological evidence suggests that the earliest known production of wine, made by fermenting grapes, took place from the late Neolithic or early Chalcolithic, possibly as early as the sixth millennium BC, between the Caucasus and the Middle East, with evidence of wine-making at different sites dated from 6000 BC in Georgia, 5000 BC in Iran, and 4100 BC in Armenia. During an extensive gene-mapping project in 2006, archaeologists analyzed the heritage of more than 110 modern grape cultivars, narrowing their origin to a region in Georgia, where wine residues were also discovered on the inner surfaces of 8,000-year-old ceramic storage jars. Chemical analysis of 7,000-year-old pottery shards indicated early winemaking in the Neolithic village of Hajji Firuz Tepe in Iran’s Zagros Mountains. Other notable areas of wine production have been discovered in Greece and date back to 4500 BC. The same sites also contain the world’s earliest evidence of crushed grapes. A winemaking press found in 2011 in the Areni-1 site of Armenia has been dated to around 4100 BC.

However, the spread of wine culture westwards was most probably due to the Phoenicians who were centered on the coastal strip of today’s Lebanon – itself one of the world’s oldest sites of wine production. The wines of Byblos were exported to Egypt during the Old Kingdom (2686 BC–2134 BC) and throughout the Mediterranean. Evidences include two Phoenician shipwrecks from 750 BC discovered by Robert Ballard, whose cargo of wine was still intact. As the first great traders of wine (‘Cherem’), the Phoenicians seem to have protected it from oxidation with a layer of olive oil, followed by a seal of pinewood and resin – this may well be the origin of the Greek retsina.

Literary references to wine are abundant in Homer (8th century BC, but possibly composed even earlier), Alkman (7th century BC), and others. In ancient Egypt, six of 36 wine amphoras were found in the tomb of King Tutankhamun bearing the name “Kha’y”, a royal chief vintner. Five of these amphoras were designated as originating from the king’s personal estate, with the sixth from the estate of the royal house of Aten.[24] Traces of wine have also been found in central Asian Xinjiang in modern-day China, dating from the second and first millennia BC.

When cooking with cheese, keep these tips in mind:

The less you heat cheese, the better. When making soup, sauce, or fondue, add the cheese last; then heat it only as long as it takes to melt. If it gets too hot it will get tough. Often, you can remove the pan from the burner; the residual heat will melt the cheese.
Shred, crumble, or finely dice the cheese before heating to ensure quick, smooth melting. The colder the cheese is, the easier it will be to cut.
Allow the shredded cheese to come to room temperature before adding it to a hot mixture.
Starch (such as all-purpose flour, cornstarch, or potato flour) will keep the cheese from curdling. If using all-purpose flour, add it to the mixture before the cheese; it needs to be cooked for a few minutes to remove the starchy taste.
Adding an acidic ingredient such as wine or lemon juice will help prevent the cheese from becoming stringy. This is why most fondues have a base of white wine. Simply sprinkle some lemon juice over the shredded cheese before heating it.
Reduced-fat cheeses have different melting characteristics than regular cheeses. They will take longer to melt and will be tougher. Be sure to shred reduced-fat cheese very finely, and allow it to melt over very low heat while stirring constantly.

Wrap soft cheeses loosely. Use waxed or greaseproof paper rather than cling film.
Let cold cheese warm up for about half an hour before eating to allow the flavour and aroma to develop.

When you buy tools, it pays to purchase quality. Remember: thrift and frugality are about obtaining value for your dollar — not just paying the cheapest price.

Own fewer tools that were pleasure to use (and lasted many seasons) than own lots of tools that didn’t cost me much. (On the other hand, it doesn’t hurt to keep your eyes open at garage sales. Sometimes you can get great deals on quality stuff.)

Shamrock cookies

1/2 cup butter, softened
1 (3 ounce) package instant pistachio pudding mix
1 1/3 cups baking mix
1 egg
1 tablespoon white sugar

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheet.
Cream together the butter or margarine and the pudding mix. Blend in the baking mix, egg and sugar and mix well.
On a lightly floured surface roll out the dough to 3/8 inch thickness and cut into cookies with a shamrock cookie cutter.
Place cookies on the prepared baking sheet and bake at 350 degrees F (175 degrees C) for 9 to 10 minutes or until lightly browned on the edges. Let cookies cool on rack. Frost with green colored icing if desired.

Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.
